Still around!

I am still around just been really busy between the two kids, two dogs, pregnancy, taking care of the house, dinner, husband, you get the point. But I do have a pic to share today. Introducing baby #3 first official picture.

When the tech was doing the u/s I swear that I saw some boy junk in there. My gut says boy and now after the u/s I feel 99% sure thats what we will be having. My next appointment is Thursday and they should scheduled me for the big u/s. However the impatient me called ahead and made a 3d elective u/s appointment an hour away to find out for sure on the 23rd. I can not wait! My kids have been so cute about baby. I know they really dont “get” what is going on but my son keeps rubbing belly saying night night baby. Its really cute!



Peanut butter and banana Smoothie!

Get ready to fall in love. This smoothie is amazing. My husband and kids LOVED this! Its so good and so easy.This is what you do.

Takes your blender, pour in 1/3 cup oatmeal and blend that up into a powder. Take two frozen bananas, cut it up into chunks and throw that in as well. (When you freeze your banana take it out of the peal and throw it onto a plate a few hours before you want to use it. Or you can freeze it into a bag if you arent using the same day) Add in 1 1/2 cup milk and 1/3 cup peanut butter. Blend til creamy. If its to thick add more milk. If its to thin add a little ice. If you really want to spoil yourself you can add chocolate chips. I poured in into a glass then cut up a few slices of fresh banana. Throw it on top and enjoy!



Homemade sweet and sour chicken with fried rice

A few nights ago I made Homemade Sweet and sour chicken with fried rice. I have made this a handful of times and everyone ends up clearing their plates. I was craving the rice so had to make this dish of course. I got this recipe from:

She has a lot of yummy recipes on her blog that I want to try. Anyways.

This is what I used:

4 boneless chicken breasts
1 cup cornstarch
2 beaten eggs
1/4 cup olive oil
3/4 cup sugar
4 tbs ketchup
1/2 cup distilled white vinegar
1 tbs soy sauce
1 tsp garlic powder
and for the fried rice:
2-3 cups cooked white rice
3 tbs olive oil
half a bag of frozen carrots and peas (sometimes I just used the mixed veggie bag, the kids love corn in it)
3 beaten eggs
1/4 c soy sauce
You can use onions as well I don’t like them so I don’t put them in.
To start I cut the chicken into little pieces and placed in a bowl. Once it was all chopped up I poured in the cornstarch and mixed it up to cover the chicken. The first few times I dipped into a bowl or cornstarch then into the egg but honestly I don’t have the time to do that with all those little pieces. In a smaller bowl I beat the two eggs then pumped that into the chicken bowl as well. The outcome was the same as if I dipped separately, so I don’t feel like there is any reason not to just do it this way.
Once you are all dipped and gooey sprinkle some olive oil in a frying pan and plop the chicken in there. I had to do this in two batches.
I really need a better camera and more lighting in the kitchen.
Leave that in there a few mins on each side. You dont want to cook all the way through just brown it. While that does its buisness you can make the sauce. Take

3/4 cup sugar
4 tbs ketchup
1/2 cup distilled white vinegar
1 tbs soy sauce
1 tsp garlic powder
and mix it up into a bowl. I doubled this because my husband likes some to dip in as well.
Once you have both batches browned throw it on a greased cookie sheet or a oven pain and pour the sauce down on top of it. Mix it up a bit too.
It looks to have too much sauce in it but when its done it does reduce and you can spoon some of the sauce into little dipping dishes for pain in the butt husbands :)
It will cook in the oven for about an hour on 325 but you will want to take it out and mix it up a bit on the halfway mark. If after an hour it doesnt seem to be done yet throw it in a little bit longer.
While that is cooking you will want to make 2-3 cups of white rice. I normally end up using only 2 cups for the fried rice and keep the rest for the next day. Day old rice made into fried rice tastes yummm. Anyways. If you haven’t made white rice yet its very easy. I’m very picky about my rice and hate if its mushy and hate when its over cooked. With that said since I tried it the way Im about to explain I have never had an issue since. The ratio is 2 cups water 1 cup rice. I normally pour a little bit of olive oil in it as well. Bring the water to a boil, throw in the rice, stir it up, heat to low/med, put lid on it and check it out in 20 mins. Once its done fluff it a bit with a fork and let it sit. Take your frying pan and heat up 3 tbs of olive oil. Take about half bag of frozen carrots and peas and let that cook for 5 mins.
In a separate bowl mix up 3 large eggs. Push the veggies off to the side in the pan and pour in the eggs. Let that cook a few mins then mix then veggies into the eggs.
Slowly scoop in some of the white rice. Pour in your 1/4c soy sauce and stir. At this point everything is cooked so I just keep stirring til all my white rice looks like fried rice.
You will be in love!
Once you are done with the rice there is a good chance your chicken is ready to be taken out.
I completely forgot to take a picture of the finished product but it was delicious.
I have made this a few times and since I like to change things up a bit I know now what not to do. The pan I put the chicken in on the picture is not to good to use. I liked it a lot better on a baking sheet or a lower rimmed pan. It gets a lot less gooey. And the flavor stands out a bit more. Only thing is its a pain to take out without spilling it a bit.
I also recommend that since there are so many parts to this dish, you need the time to make it. 1 1/2-2 hours about doesnt seem that bad but with a 3 yr old and a 2 yr old it could get a bit tricky. Tricky but very well worth it. Was yum. Hope you enjoy


Now Buggy did that make any sense?

Often times I find myself thinking what in the world is going through their heads? What made him dump that bowl of cheerios just to ask for more? Or What is the point of dumping ALL of your toys in the middle of the playroom? Don’t they know they will spend an hour being told to clean it up?! I could go on and on. But I really got to thinking this morning. Every morning we have a routine. We all get out of bed and mommy has to pee (this is the last pee I will get for a few hours). While I am peeing they take off their diapers and throw them into the bathroom trash. Normally when I am done Bugs will sit on the potty and do a little pee then Mimi will sit on there and “try”. I grab clothes for them then we walk down stairs and I grab sippy cups and a bowl of cheerios. This is the point where Im normally mad at myself for not cleaning up a little more before bed cause now I really have no time to straighten up! I put on some cartoons, get a diaper on the princess and “onionwear” on the boy. Put there clean outfit on for the day and proceed to make breakfast. While I am doing so they will fight, one of them will spill the other ones snack cup, sippys will be hidden from one another its a full out battle. By the time eggs and toast are done being made I will have a living room loaded of cereal and both kids yelling at me for more toons. I set them up in there chairs and start a new toon. I go into the kitchen and not to long after Im being asks for “dippy dippy” which means they want ketchup. I put a dot on each of their plates and back to the kitchen to clean up.

“mommy eggs are yuk…no more” Ugh back to the kids. Buggy has painted his eggs with the ketchup and he doesnt like it. Why all of a sudden does he not like it i dont know. I take the plate and throw it on the counter. All of a sudden Mimi screams. Buggy is now eating her eggs that are smothered in ketchup. Now can you tell me why he likes her ketchup covered eggs but his are yukky. How does that make any sense?! To solve the problem Bugs gets her plate and she gets his plate. Everyone is happy! Except mommy because at this point I am still not done cleaning the kitchen and they want to paint.



MMMM the smell of soup!

Last week I scored 4 bags of Earthbound Organic carrots for .24 each from Walmart (thanks to coupons!). When I got home with my score I peeled and sliced them all up for snacks during the week and have them ready for tonight’s SOUP! Since I am feeling miserable with this darn cold I chose today to make some homemade chicken soup. Now this is nothing from a recipe its kind of a chop and plop kind of soup. Whatever veggies that were in the fridge were thrown into the pot. I had half of a small cabbage in there so I shred that up, had a few pieces of celery so I chopped it up a little smaller for the monsters, put a few pieces of chicken thighs, and chopped up a ton of garlic. I had a bag of frozen corn in the freezer so that got thrown in there as well. Since I only had a few pieces of chicken for this soup and a huge pot I wanted to make sure it had some good chicken stock flavor in it so last night I took out some frozen chicken stock that I had made a few weeks ago. By this morning it was liquid so I was able to just pour it into the pot. Once everything was in the pot I added some more water and spices and turned it on. It is still cooking now, should be done by the time husband is home. In a few minutes I will make a pot of rice as well as a pot of pasta. I don’t throw it into the pot when its done because husband likes his soup with pasta and I love my rice. This way we both get what we want and tomorrow I can take the leftovers and make something else. YAY! It smells sooooo good. Can’t wait til its done :)



Mimi is mad at me today

I have had a cold for a few days now and I am absolutely miserable! I was doing so good not letting my morning sickness get the best of me but Monday I couldn’t control it anymore and I got sick 10 times! Gross! And your welcome for sharing that. Anyways lets get back to the topic. This morning instead of being woken up by my little cuddle bug at 7am, I was woken up at 6am by a little princess jumping bean! She jumped into my bed, said “no more night night mommy up”. I get out of bed brought her downstairs, hoping she didnt wake up Buggy. Normally things are calm for a while, we do diapers, breakfast, fill cups and get some toons. Well she is mad at me so it wasnt like that. It was “mommy dance mommy shakeabutt shakeabutt”. So I shookmybutt for a few mins and plopped into my chair. A few mins later Buggy came down and he was ticked off for being woken up.

The next few hours were a blur. Then came snack time! I go into the kitchen and grab them something to eat. What do I find when I come back to the living room? Poop! Where do you ask? Well of course on my couch!



Vanilla Frosting!

I’ve been doing so good staying away from snack foods and sticking with the healthier stuff. Then this morning it hit me. I was searching for something to eat and what do I find vanilla frosting! I’m fighting the craving! And its not easy. So far so good. I feel like a wild animal stalking its pray…. I want to pounce on that jar, rip the lid off, shove my hand in it and eat the whole container. But instead I’m eating celery… yum…



Last day of 2012

Like every year I make resolutions and half of them don’t get fulfilled. This year I am making it a point that I make it happen. So here they are:

-not gain to much this pregnancy-have a safe and healthy one

-once baby is born work on losing the weight Ive gained since starting to have kids

-finish foster care licence and open our home for it by end of the year

-I made a list of places in the area that are kid friendly (visit farm animal horse place, kiddie gyms, mommy n me at the library, ect)

-I found this 52 weeks of organizing website which I want to follow. This house needs more structure.

-do a 365 days of photos for the kids

-Do more things as a family. Often I find that when my husband comes home he goes his way, I go mine and the kids play. I want to bring us together more. Have more “unplug” days (no electronics just family).

I dont see why this list (besides weight loss) wouldnt be achievable. So good bye 2012 and welcome 2013!



Just for fun.

I decided to do some at home old wives tale gender tests. Ya I’m only about 5 weeks but its just for fun…

My husband thought I was nuts when I him to find the baking soda so I can mix it with my pee. I did my pee thing then got a disposable cup. We put 1 tsp in the cut then poured a tiny bit of pees in it. No fizzle, which according to some gender predictor webpages I read means its a girl.

Next we did the ring on a string hold it over the belly test. If it moves in a circle its a girl or if it moves back and forth its a boy. It moved back and forth so according to this test its a boy.

After those two “tests” were done I relieved my husband from playing along with my silliness. You can tell he was quite pleased to know he was off the crazy train and could return to his man things (xbox).

Then finally a hunt for a Chinese Gender Calendar began. I found one and it said this poppy seed is a boy.

So we got mixed results. No I don’t believe any of these tests, it was just for fun since I’m pretty bored tonight.

And that is all. I’ll be calling doctor up on Monday to get an appointment to check on whats going on down in the mama oven. Hopefully then I’ll get an accurate due date since Im not sure on my dates. Thinking it is August 30th about but we will see soon.



Homemade Chicken and Dumplings

Tonight I decided to be adventures and make Homemade Chicken and Dumplings. I found the recipe on tastykitchen.com. I love that site for recipes I can always find something yummy on there. This was my first time making anything with dough (I mean I have tried and just end up throwing it out halfway through).  but I don’t think I did to bad.

This is what you need:

2 cups Flour

½ teaspoons Baking Powder

1 pinch Salt

2 Tablespoons Butter

1 cup Milk

2 quarts Chicken Broth

3 cups Cooked shredded Chicken

And this is what you do:

In a bowl mix the flour, baking powder and salt. Mix the butter into the flour mixture, then  stir in the milk. Fork was best way to mix it up.

Cover counter or surface, as well as rolling pin with a ton of flour. Its very sticky. Flour is your friend. (Especially when your husband walks by and you make a hand print on his butt, doesn’t matter I do the laundry anyways) You will need something to cut the dough with, pizza cutter worked great.

Roll the dough out thin then use pizza cutter to cut 2″x2″ pieces. Its okay if they are not all the same size.

While I was taking care of the dough I boiled some chicken in one pot and used a bigger pot to boil the chicken broth.

Once your done making your pieces and the broth is at a boil drop the pieces one at a time and mix while you drop them in. Cook for 15-20 mins about. The extra flour that you used to keep the pieces from sticking help thicken the chicken broth. While the pieces are in the boiling broth shred your chicken and drop them into the broth as well. By then it shouldn’t have a flour taste if it does wait a little longer before putting the chicken in.

The Verdict:

Well I followed the exact recipe from tastykitchen.com and it wasn’t as tasty as I was hoping. Every time I try a new recipe out I have my husband give me a 1-10 rating. 1 being bad 10 being oh my gosh yum. Tonight I got a 6. BOOOO. It sort of tasted like something was missing. There are a lot of get comments on the tastykitchen.com website as for how it came out great so maybe it was just me. I am by far not a great cook however I do give myself an A+ for effort. It was very light on the stomach which was why I chose this recipe for tonight (my preggo nauseous belly was very happy for something light).
